Tender beef, soft potatoes, carrots, olives, and rich Puerto Rican seasoning—all slowly simmered in a flavorful sauce. This is pure comfort food! 😍

PREPARATION:

1️⃣ Cut 2 lb of stew beef into bite-sized pieces. Season with adobo, sazón, and oregano.

2️⃣ Heat 2 tablespoons of oil in a large pot over medium-high heat.

3️⃣ Add the beef and brown it for 5–7 minutes, stirring occasionally.

4️⃣ Add ¼ cup of sofrito and cook for 2 minutes until fragrant.

5️⃣ Stir in ½ cup of tomato sauce, ¼ cup of green olives, and 1 bay leaf.

6️⃣ Pour in 2 cups of beef broth or water. Mix well and bring it to a gentle boil.

7️⃣ Reduce the heat, cover, and simmer for approximately 45 minutes.

8️⃣ Add 2 chopped potatoes and 2 sliced carrots. Cover again and cook for another 25–30 minutes.

9️⃣ When the beef is tender and the vegetables are soft, remove the bay leaf. Simmer uncovered for a few minutes if you want a thicker sauce.

🔟 Garnish with fresh cilantro and serve hot with white rice, avocado, or tostones.
