Ingredients:
• 5 ripe plantains
• 1 lb ground beef
• ⅓ cup sofrito
• ½ cup tomato sauce
• 1 packet sazón
• 1 teaspoon adobo
• ⅓ cup green olives
• 2 cups shredded cheese
• 2 large eggs
• Oil for frying
Directions:
1️⃣ Preheat your oven to 350°F (175°C).
2️⃣ Peel the ripe plantains and slice them lengthwise into thin strips.
3️⃣ Heat a little oil in a pan. Fry the plantain slices on both sides until golden and soft. Place them on paper towels to remove excess oil.
4️⃣ In another pan, cook the ground beef over medium heat until browned. Drain any excess grease.
5️⃣ Add the sofrito, tomato sauce, sazón, adobo, and green olives. Stir well and cook for another 5–7 minutes.
6️⃣ Lightly grease a baking dish. Arrange a layer of fried plantains across the bottom.
7️⃣ Spread half of the seasoned beef over the plantains, then add a layer of shredded cheese.
8️⃣ Repeat the layers, finishing with plantains and cheese on top.
9️⃣ Beat the two eggs in a small bowl. Pour them evenly over the entire pastelón to help hold the layers together.
🔟 Bake uncovered for 25–30 minutes, until the cheese is melted and the top is golden.
