Caramel
- ¾ cup granulated sugar 150 g
- ¼ cup water 60 ml
Bread Pudding
- 12 ounces day-old pan de agua or plain French bread 340 g, cut into ½-inch (1.3 cm) pieces
- 1 can evaporated milk 12 fluid ounces (approximately 355 ml)
- 1 cup whole milk 240 ml
- 1 can sweetened condensed milk 14 ounces (396 g)
- 4 large eggs
- 4 tablespoons unsalted butter 57 g, melted and cooled until lukewarm
- 2 teaspoons vanilla extract 10 ml
- 1 teaspoon ground cinnamon approximately 2.6 g
- ¼ teaspoon fine salt approximately 1.5 g
- ½ cup raisins 75 g
Water Bath
- Hot water enough to reach halfway up the outside of the cake pan
Soften the Bread
Place the bread pieces in a large bowl. Pour in the evaporated milk and whole milk. Toss thoroughly, pressing the bread beneath the liquid.
Let soak for 20 minutes, turning and pressing the bread halfway through. Every piece should be soft enough to crush easily. Very dry bread may need a little longer.
Prepare the Oven and Caramel
After the soaking period, preheat the oven to 350°F (175°C), with a rack in the center. Set the cake pan on a heatproof surface and have the roasting pan nearby.
Combine the caramel sugar and ¼ cup water in the saucepan. Stir to moisten the sugar, then cook over medium heat without stirring for approximately 8–12 minutes. Swirl the pan gently if the color develops unevenly.
When the syrup turns medium amber, remove it from the heat. Immediately pour it into the cake pan. Wearing oven mitts, tilt the pan to coat the bottom. Set aside while finishing the filling. The caramel will harden; this is normal.
Finish the Bread Mixture
Mash the soaked bread with a potato masher or sturdy fork until it becomes a thick, cohesive mixture. Small softened pieces are fine, but no dry chunks should remain.
In a separate bowl, whisk together the condensed milk, eggs, melted butter, vanilla, cinnamon, and salt until combined.
Stir the egg mixture into the mashed bread, then fold in the raisins. Scrape the mixture into the caramel-coated pan and level the surface. Cover securely with foil.
Bake in a Water Bath
Place the cake pan inside the roasting pan. Set the roasting pan on the oven rack, then carefully pour hot water around the cake pan until it reaches halfway up its sides. Do not splash water into the pudding.
Bake for approximately 60–80 minutes, using 70 minutes as the planning estimate. Begin checking at 60 minutes. The edges should be set, and the center should have only a slight movement—not a liquid slosh.
Insert an instant-read thermometer into the center without touching the pan. It must reach at least 160°F (71°C) for egg safety; it may need further baking to develop a fully set texture. A thin knife inserted near the center should emerge without liquid custard, though moist crumbs are normal.
If needed, re-cover and continue baking in 5–10-minute intervals. Carefully remove the cake pan from the water bath when done.
Cool and Chill
Remove the foil and cool on a rack for 1 hour. Refrigerate in the pan for at least 2 hours, until thoroughly chilled and firm enough to unmold. Cover once it is no longer steaming.
For a convenient make-ahead option, refrigerate overnight. Do not leave the pudding on the counter until completely cold.
Unmold and Serve
Run a thin knife around the inside edge of the pan. Place a rimmed platter over it, hold both firmly, and invert. Wait approximately 30 seconds, then lift the pan gently.
If it does not release, turn it upright again. Stand the bottom of the pan in warm water for 15–20 seconds, keeping water below the rim, then retry.
Let the liquid caramel flow over the pudding. Leave hardened caramel in the pan rather than scraping it onto the dessert. Cut into 12 slices and serve chilled.
Bread Choices
Pan de agua or plain French bread keeps the sweetness balanced. Pan sobao can also be used, but it produces a sweeter, richer result.
Keep tender crusts. If the loaf has an unusually thick, hard crust, trim it and weigh out 340 g of bread after trimming.
Raisins
Raisins are included in this recipe and its nutrition estimate. If your family prefers budín without them, omit the ½ cup; no other adjustment is needed.
Milk and Sweetness
Evaporated milk is unsweetened, while condensed milk is sweetened. They are not interchangeable.
There is no extra sugar in the bread mixture because the condensed milk and caramel provide sweetness.
Salt
Use unsalted butter and the measured ¼ teaspoon salt. If using salted butter, omit the added salt.
Caramel Safety
Hot caramel can cause serious burns. Use oven mitts, keep children away from the work area, and never touch or taste hot caramel.
Doneness
The minimum safe temperature for dishes containing eggs is 160°F (71°C). Check the texture as well: the center should be set, without liquid custard. Food Safety and Inspection Service
Storage
Refrigerate covered at 40°F (4°C) or below within 2 hours of baking or serving—within 1 hour if the surroundings exceed 90°F (32°C). Use within 3–4 days. Serve cold, or reheat individual portions to 165°F (74°C).
