Ingredients
PICADILLO FILLING
- ½ lb lean ground beef
- 1 tablespoon olive oil
- 2 tablespoons Puerto Rican sofrito
- 3 tablespoons tomato sauce
- 1 packet sazón with coriander and annatto
- 2 tablespoons Spanish green olives finely chopped
- ½ teaspoon dried oregano
- Salt and black pepper only if needed
POTATO MIXTURE
- 2 lb russet or Yukon Gold potatoes peeled and cubed
- 2 tablespoons butter
- 1 large egg lightly beaten
- 2 tablespoons cornstarch
- 1 teaspoon adobo seasoning
- ½ teaspoon salt
FOR SHAPING AND FRYING
- ¼ cup cornstarch for dusting
- Approximately 4 cups vegetable or canola oil for frying
Instructions
Prepare the picadillo
- Heat the olive oil in a skillet over medium-high heat. Add the ground beef and cook for 5–6 minutes, breaking it into small pieces, until browned. Drain excessive grease if necessary.
Season the filling
- Add the sofrito, tomato sauce, sazón, chopped olives, and oregano. Cook for another 6–8 minutes, stirring occasionally, until the mixture is flavorful and almost completely dry. Taste before adding salt. Transfer to a bowl and allow it to cool completely.
Cook the potatoes
- Place the potatoes in a large pot and cover them with cold water. Add a generous pinch of salt and bring to a boil. Cook for approximately 18–20 minutes, until completely tender.
Dry and mash
- Drain the potatoes thoroughly and return them to the warm pot. Let them steam-dry for 2–3 minutes. Mash until completely smooth and free of lumps.
Make the potato dough
- Mix the butter into the warm potatoes. Allow the mixture to cool until only slightly warm, then add the beaten egg, 2 tablespoons of cornstarch, adobo, and salt. Mix until a firm, smooth potato dough forms.
Shape the rellenos
- Lightly dust your hands with cornstarch. Place approximately ¼ cup of potato mixture in your palm and flatten it into a disc.
Add the filling
- Place approximately 1 tablespoon of cooled picadillo in the center. Bring the potato mixture around the filling and seal it completely. Gently roll it into a smooth ball.
Dust and chill
- Lightly coat each finished ball with cornstarch. Arrange them on a tray and refrigerate for 20–30 minutes. This helps prevent them from breaking while frying.
Heat the oil
- Pour approximately 3 inches of frying oil into a deep pot. Heat it to 350°F (175°C).
Fry the rellenos
- Carefully fry 3–4 rellenos at a time for approximately 4–5 minutes, turning when necessary, until evenly golden brown. Avoid overcrowding the pot.
Drain and serve
- Remove the rellenos with a slotted spoon. Drain them on a wire rack or paper towels and let them rest for 2–3 minutes before serving.
- Serve warm with mayoketchup, garlic sauce, or hot sauce.

INGREDIENTES
RELLENO DE PICADILLO
* ½ libra de carne molida de res magra
* 1 cucharada de aceite de oliva
* 2 cucharadas de sofrito puertorriqueño
* 3 cucharadas de salsa de tomate
* 1 sobre de sazón con culantro y achiote
* 2 cucharadas de aceitunas verdes españolas, finamente picadas
* ½ cucharadita de orégano seco
* Sal y pimienta negra, solamente si es necesario
MEZCLA DE PAPA
* 2 libras de papas Russet o Yukon Gold, peladas y cortadas en cubos
* 2 cucharadas de mantequilla
* 1 huevo grande, ligeramente batido
* 2 cucharadas de maicena
* 1 cucharadita de adobo
* ½ cucharadita de sal
PARA FORMAR Y FREÍR
* ¼ de taza de maicena para espolvorear
* Aproximadamente 4 tazas de aceite vegetal o de canola para freír
INSTRUCCIONES
PREPARAR EL PICADILLO
Caliente el aceite de oliva en una sartén a fuego medio-alto. Añada la carne molida y cocine durante 5–6 minutos, desmenuzándola en trozos pequeños, hasta que esté dorada. Escurra el exceso de grasa si es necesario.
SAZONAR EL RELLENO
Añada el sofrito, la salsa de tomate, el sazón, las aceitunas picadas y el orégano. Cocine durante otros 6–8 minutos, revolviendo ocasionalmente, hasta que la mezcla tenga buen sabor y esté casi completamente seca. Pruebe el picadillo antes de añadir sal. Transfiéralo a un tazón y déjelo enfriar completamente.
COCINAR LAS PAPAS
Coloque las papas en una olla grande y cúbralas con agua fría. Añada una pizca generosa de sal y lleve el agua a ebullición. Cocine durante aproximadamente 18–20 minutos, hasta que las papas estén completamente tiernas.
SECAR Y MAJAR
Escurra muy bien las papas y vuelva a colocarlas en la olla caliente. Déjelas secar con el vapor residual durante 2–3 minutos. Májelas hasta obtener una mezcla completamente suave y sin grumos.
PREPARAR LA MASA DE PAPA
Incorpore la mantequilla a las papas calientes. Deje enfriar la mezcla hasta que esté apenas tibia. Después, añada el huevo batido, 2 cucharadas de maicena, el adobo y la sal. Mezcle hasta formar una masa de papa firme y suave.
FORMAR LOS RELLENOS
Espolvoree ligeramente sus manos con maicena. Coloque aproximadamente ¼ de taza de la mezcla de papa en la palma de la mano y aplánela hasta formar un disco.
AÑADIR EL RELLENO
Coloque aproximadamente 1 cucharada del picadillo frío en el centro. Cierre la mezcla de papa alrededor del relleno y séllela completamente. Ruédela suavemente entre las manos hasta formar una bola lisa.
CUBRIR Y REFRIGERAR

NOTAS IMPORTANTES
* El picadillo debe estar frío y relativamente seco antes de rellenar las papas.
* Después de escurrirlas, deje que las papas se sequen con el vapor residual. El exceso de agua puede hacer que la mezcla quede demasiado blanda.
* Si resulta difícil formar los rellenos, refrigere la mezcla de papa durante aproximadamente 20 minutos.
* Mantenga el aceite cerca de 350 °F (175 °C). Si el aceite no está suficientemente caliente, los rellenos pueden quedar grasosos o romperse.
* Fría los rellenos en tandas pequeñas para mantener estable la temperatura del aceite.
* El relleno estará extremadamente caliente inmediatamente después de freír. Deje reposar los rellenos unos minutos antes de servir.
