Coquito de Pistacho (Puerto Rican Pistachio Coquito)

This version keeps preparation simple: blend, refrigerate, and shake before pouring. Using smooth pistachio butter avoids the extra work of grinding whole nuts.

Serve it in small glasses. It is rich enough that a little goes a long way.

WHAT DOES IT TASTE LIKE?

The first flavors are sweet coconut and pistachio, followed by vanilla, a little cinnamon, and the warmth of rum.

The texture is creamy and pourable, not frozen or pudding-thick. Without added coloring, expect a muted pistachio-beige or pale green shade—not bright green.

WHY YOU SHOULD TRY IT

It takes about 10 minutes to prepare, requires no cooking, and can chill while you finish the rest of your meal.

It also offers a different flavor from classic coconut coquito while keeping the familiar creamy base.

HELPFUL RECIPE TIPS

  • Check the pistachio label. Choose smooth butter or paste made from 100% pistachios, without sugar or salt.
  • Stir the nut butter first. Natural oil separation is normal.
  • Do not confuse coconut products. Sweetened cream of coconut and unsweetened coconut milk have different roles.
  • Blend the pistachio butter with evaporated milk first. This helps disperse it evenly.
  • Leave space in the bottles. You need room to shake the chilled drink.
  • Serve cold in small portions. Ice is unnecessary and will dilute the drink.
  • Expect slight separation. Shake or stir before serving.

Ingredients
  

Coquito

  • 1 can unsweetened full-fat coconut milk 13.5 fluid ounces (approximately 400 ml)
  • 1 can sweetened cream of coconut 15 ounces (425 g), stirred until uniform
  • 1 can evaporated milk 12 fluid ounces (approximately 355 ml)
  • ½ of a 14-ounce can sweetened condensed milk 198 g; approximately ⅔ cup
  • ½ cup smooth unsweetened, unsalted 100% pistachio butter (120 g)
  • 1 cup white rum 240 ml, 40% alcohol by volume
  • 1 teaspoon vanilla extract 5 ml
  • ¼ teaspoon ground cinnamon

Instructions
 

Prepare the Ingredients

  • Stir the pistachio butter thoroughly to incorporate any separated oil. Stir the cream of coconut until smooth. Scrape any solid coconut cream from the coconut-milk can into the mixture rather than discarding it.

Blend the Coquito

  • Add the evaporated milk and pistachio butter to the blender. Blend for 30–45 seconds, until evenly combined. Stop and scrape down the sides if necessary.
  • Add the coconut milk, cream of coconut, condensed milk, vanilla, and cinnamon. Blend for another 30–45 seconds, until smooth.
  • Add the rum and blend on low for approximately 10 seconds, just until mixed. Do not exceed the blender’s maximum fill line; work in batches if needed.

Chill

  • Transfer to clean bottles or a covered pitcher, leaving space for shaking. Refrigerate at 40°F (4°C) or below for at least 4 hours, until thoroughly cold. Overnight chilling is also suitable.

Serve

  • Shake the closed bottles well or stir the pitcher thoroughly. Natural separation and some thickening are expected.
  • Pour into 16 small servings of approximately 95–100 ml each. Serve cold without ice or garnish.

Notes

The Correct Pistachio Ingredient

Use smooth 100% pistachio butter or paste. “Pistachio cream” or crema al pistacchio often contains sugar, oils, milk powder, or white chocolate and is not a direct substitute.
Pistachio pudding mix and pistachio ice cream also change sweetness and thickness. They require a different formula.

Coconut Milk Versus Cream of Coconut

  • Coconut milk: unsweetened canned coconut milk.
  • Cream of coconut: a thick, sweetened cocktail ingredient.
  • Coconut cream: usually unsweetened and not interchangeable with cream of coconut here.

Natural Color

Pure pistachio butter varies from beige-green to olive green. Combined with coconut and dairy, it produces a subdued color. Bright green is not a sign of stronger pistachio flavor.

Sweetness and Salt

The cream of coconut and condensed milk supply the sugar. Do not add more sugar automatically.
No added salt is needed. Salted pistachio butter can make the drink noticeably salty.

Nonalcoholic Variation

Replace the 1 cup rum with 1 cup pasteurized whole milk. For a completely alcohol-free version, use alcohol-free vanilla flavoring.
Keep the same refrigeration and storage precautions. Nutrition differs from the rum version.

Allergens

Contains milk and pistachios (tree nuts), plus coconut. Clearly identify these ingredients when serving or gifting.

Storage

Refrigerate immediately after blending and keep at 40°F (4°C) or below. As a conservative home-kitchen guideline, use within 3–4 days.
Do not treat the rum as a preservative or assume the drink is shelf-stable. Keep bottles chilled during transport. Discard portions left unrefrigerated for more than 2 hours, or 1 hour above 90°F (32°C). Serving Alcohol Responsibly
