Tortilla Puertorriqueña de Jamón y Queso (Ham and Cheese Omelet)
The filling comes first in this tortilla puertorriqueña de jamón y queso: finely diced onion and green pepper softened in butter, followed by ham and a layer of mild cheddar. Once everything is warm and ready, the eggs need only a few minutes in the skillet.
I chose this version for Cocina Hacks because it turns everyday ingredients into a breakfast that feels complete without needing lots of extras. The onion and pepper bring sweetness and texture, while the ham and melted cheese make each bite savory.
Here, “tortilla” means an egg omelet. This is a Puerto Rican-style home breakfast variation, with no potatoes or flour tortilla involved. The recipe makes two individual omelets, using two eggs per person, and takes about 20 minutes.
One skillet, two omelets
An 8-inch nonstick skillet is a useful size for this recipe. It keeps each two-egg portion thick enough to fold around the filling. In a much larger pan, the eggs spread into a thinner layer that can tear more easily.
Prepare the filling for both servings together. Dice the onion, green pepper, and fully cooked ham into small pieces so they distribute evenly rather than forming bulky pockets.
Soften the vegetables first, then add the ham just long enough to heat it through. Transfer everything to a bowl and divide it into two portions before starting the eggs. This keeps the filling ready to add at the right moment, without leaving the omelet cooking while you measure or chop.
The tablespoon of butter in the recipe is divided between three jobs: cooking the filling, cooking the first omelet, and cooking the second. Having those portions ready makes the sequence easier to follow.
Give the eggs time to hold together
Beat the eggs with the measured water and black pepper until the whites and yolks are evenly combined. There’s no added salt in this version because the ham and cheddar already contribute it.
After cooking the filling, turn the heat down to medium-low before adding the first half of the egg mixture. As the edges set, gently push them toward the center and tilt the pan so uncooked egg can flow into the spaces.
You’re looking for a cohesive round with a mostly set surface before adding the filling. If the underside starts browning quickly, reduce the heat. A deeply browned base can become firm before the top is ready to fold.
Place the warm filling and shredded cheese on one half of the omelet, leaving a little room around the edge. Fold the empty half over it, then cover the pan briefly over low heat. The lid helps the cheese melt while the egg finishes setting, without needing a hotter burner.
Once no wet or runny egg remains, slide the omelet onto a plate. Cover it loosely while you cook the second, and give the remaining beaten eggs a quick stir before pouring them into the skillet.
A neat fold is satisfying, but a small tear won’t spoil breakfast. Tender eggs and a warm, melted filling matter more than a perfect shape.
For serving, toast or sliced avocado is plenty alongside it. If you’d like to make the bread yourself, arepas de coco offer a lightly sweet contrast to the salty filling.
The same ham-and-cheese combination takes a different direction in my sandwich de Mallorca con jamón y queso. And for a breakfast where you can skip the folding altogether, try huevos con sofrito y tostadas.

Tortilla Puertorriqueña de Jamón y Queso
Equipment
- 8-inch nonstick skillet with a lid
- Flexible silicone spatula
- Mixing bowl
- Fork or whisk
- Knife
- Cutting board
- Measuring cups and spoons
- Kitchen scale
- Small bowl for the cooked filling
- Two serving plates
Ingredients
EGGS
- 4 large eggs
- 2 tablespoons water 30 ml
- ⅛ teaspoon ground black pepper
FILLING
- 3 oz fully cooked ham 85 g, finely diced
- ½ cup shredded mild cheddar cheese 56 g
- ¼ cup finely diced onion 40 g
- ¼ cup finely diced green bell pepper 35 g
FOR COOKING
- 1 tablespoon unsalted butter 14 g, divided into 3 equal portions
Instructions
- Finely dice the ham, onion, and green pepper. Shred the cheese and set aside. Divide the butter into three portions of approximately 1 teaspoon each.
- Melt one portion of butter in an 8-inch nonstick skillet over medium heat. Add the onion and pepper. Cook for 3–4 minutes, stirring frequently, until softened.
- Add the fully cooked ham and cook for another 1–2 minutes, stirring, until hot. Transfer the filling to a small bowl and divide it into two equal portions.
- Beat the eggs with the water and black pepper until the yolks and whites are evenly combined. No additional salt is included because the ham and cheese already provide salt.
- Reduce the heat to medium-low. Melt another portion of butter in the skillet and swirl to coat the base.
- Pour in half the egg mixture. As the edges begin to set, gently push them toward the center with a spatula, tilting the skillet so the uncooked egg flows into the cleared spaces.
- Continue cooking for approximately 2–3 minutes, until the egg forms a cohesive round and the top is mostly set. Reduce the heat if the underside begins browning quickly.
- Arrange half the warm ham-and-vegetable filling over one half of the egg round. Top with half the shredded cheese, keeping the filling away from the outer edge.
- Use the spatula to fold the unfilled half over the filling. Cover and cook over low heat for approximately 1–2 minutes, until the cheese melts and the egg is fully set, with no wet or runny egg remaining.
- Slide the first omelet onto a plate and cover loosely to keep warm.
- Add the final portion of butter to the skillet. Repeat with the remaining egg mixture, filling, and cheese. Stir the egg mixture briefly before pouring it into the pan.
